The premium Kaizan series from Zaku is designed to provide a higher grade of taste of Zaku.The Buddhist teaching of "Ittekisui" - dripping water- is that all beings - mountains, rivers, plants and trees - embody the world and all things in it, and that therefore even a drop of water contains the life of a Buddha. The pursuit of the noble ideal of sake is, in consequence, the accumulation of daily deeds. This is how this sake is brewed, with the pursuit of an oriented taste. Yamada-Nishiki, which is considered the best rice for sake brewing with a milling ratio of 40%, is brewed slowly at a low temperature. This Junmai Daiginjo has a noble and elegant taste and a pleasant aftertaste, just like the Enju tree, which has been considered a noble tree since ancient times.
